Lindisfarne Mead Pork Casserole

Ingredients:
4 pork fillets
1 egg
4 oz brown breadcrumbs
2 medium onions
½ pound of cooking apples
2 oz butter
3 tblsp olive oil
½ tblsp sage
Salt and pepper to taste
¼ pt. Lindisfarne Mede

Preparation:
Wash and dry each fillet, dip in lightly beaten egg and pat on the breadcrumbs.
Melt butter and oil in a large frying pan and fry the fillets quickly on each side until golden brown.
Peel, core and slice the apples, placing them in alternate layers with the pork and sliced onions in a casserole dish. Sprinkle sage and seasoning on each layer.

Pour the Lindisfarne Mede over the ingredients, cover and bake in a moderate oven for one hour, or until cooked to taste.
